3 Easy Winter Salad Recipes

In your mind, winter may not be quite the right time for a salad. But, listen up, with the following 3 easy winter salad recipes, you’ll be keeping healthy, while still enjoying lots of comfort on cold days.

Walnut, Stilton, and Chicory Salad

This salad combines the wonderful strong flavor of Stilton with the goodness and bitterness of walnuts, as well as the solid taste of chicory.

Ingredients:

  • 60g of Stilton
  • 2 tablespoons of crème fraiche
  • 2 tablespoons of lemon juice
  • 2 chicory heads
  • 2 celery sticks
  • 180g of mixed leaves
  • 3 tablespoons of extra virgin olive oil
  • 60g of walnuts

Combine the crème fraiche, lemon juice, and 15g Stilton to make the dressing, set aside. Rinse the chicory and celery, pat dry. Divide the chicory into eights and thinly slice the celery. Put into the bowl but keep some celery to garnish. Wash and dry the mixed leaves. Toss everything in a bowl, also adding the rest of the stilton and the walnuts.

This salad combines the goodness of avocado with the summer freshness of clementine and hearty ham.

Ingredients:

  • 5 clementines
  • 2 avocados
  • 125g pomegranate seeds
  • 180g of shredded ham
  • 80g of toasted pine nuts
  • 140g rocket leaves

Dressing:

  • 100ml olive oil
  • juice of 4 clementines
  • 1 tablespoon of fennel seeds
  • 25 g chopped parsley

To make the dressing, toast and crush the fennel seeds in a frying pan, allow cooling before blending with the other ingredients. Allow the dressing to simmer for a few minutes. Toss all the salad ingredients and add dressing once cooled down. Garnish with parsley.

Lentil, Apple and Mixed Green Salad

Get the goodness of lentils with a twist of apple and mixed leaves.

Ingredients:

  • ½ cup of cooked lentils
  • 1 ½ cup of mixed leaves
  • 1 apple

Dressing:

  • 1 ½ tablespoon of feta cheese
  • 2 tablespoons of olive oil
  • 1 tablespoon of vinegar

Put the leaves into a bowl and top with lentils, apple slices, and crumbled feta cheese before drizzling with oil and vinegar.
